I've raced the Michelin Jet's plenty of times when it was just dry grass to deal with and had no issues. The dry-condition version of the Grifo is also good and comes in either a tuby or clincher.

Maxxis Mimo would be a good option. Really similar tread to a lot of the Euro tubies. Michelin Jet is also a good call.

Keep in mind that the course in on soccer fields. The sprinklers run fairly regularly there, so you do run the chance of having some nice slick wet spots. A semi-slick might not be the best choice. Maybe something like the Maxxis Mimo, or a Vredestien. Just my 2 cents.

I'm not much help on the tires but I am jealous that you're going to CrossVegas. I do a lot of Trade shows for my job(sales) but none of them are fun in any way. This one would be really cool to attend or even work at.
