So in past years I've ridden typical low-end cables. Through the season I might have to change them out depending on how much I was racing and what the conditions were. This year I'm thinking of going with some Gore RideOn cables, at least for the shifters, but I'm wondering what experience everyone might have with others like Sram Flak Jackets, etc. Also, is there any reason to use sealed cable systems for the brakes? I can't see it as compared to shifters, but I'd be curious to know what you think on this too.

As always, thanks!

The Gore cables (sealed) seem to be popular SEE HERE
I haven't used them though. I like to use XTR cables.
Not too sure about sealed brake cables though?!?!
