I just got bit by the cross bug last weekend and put an order in for a frame set the morning. I'm taking the parts off my old road bike so I'll need to buy brakes and tires. Price isn't the issue. They don't need to be light just good performance and easy to adjust.

Any suggestions?

Paul Neo Retro in the front, and Paul Touring in the rear.
Definitely pauls in the front. If you are only going to run one set of clincher wheels, I'd go with Challenge Grifo tires for training and racing. Perhaps Ritchey Speed Max if you live some where dry and dusty. Once you get serious about racing, you'll want 2-3 more wheelsets with different tires for different conditions
I'd recommend the Challenge Fango. It will be a bit more forgiving, esp if it's at all sloppy.

For brakes the Avid shortys will work well with a bit better stopping power. The primary advantage of high profile brakes such as Pauls is that they clear mud. So depending on where you live this may not matter at all.
Thanks for the suggestions. Another question...I was planning on using my Ultegra derailures and cassette. Is this OK?
yes, those will work great...just make sure you use gearing a little lower than you would on the road ex: 36/46, 38/46, or even 34/50 with a 11-23 rear are all fairly "normal"
