I am considering spending some time in europe this coming winter and would like to race some Belgian cyclocross during my stay. I am a competitive elite rider in seattle and would want to be racing at a local elite level, one or 2 steps bellow world cups, and plan on buying a UCI elite license. Are there any good sources of info for schedules and race info? This is still in the crazy idea stage and I am trying to figure out how to make it happen logistically in terms of housing transport etc. any advise is appreciated

Check out Pete Webber's video journal . He's a master's guy who is crazy fast and did a trip last winter. He shelled those Belgians right out of their wellies!
Carl, a few of us from the Crossniacs went over and did 3 races last year and Masters Worlds. It was an amazing experience. We are forming a professional team right now to be based in Belgium. Send me an email jared@crossniacs.com and I can send you some details. We are partnering with http://www.chainringtours.com who will be hosting the riders.
Brush up on your Flemish or put this into Google Translate:

Kalendar/Uitslagen is probably going to be the most useful link with the schedule and results.

You could also try staying with this team just outside of Ghent:
