Williams Cross Tubulars
I got a pair of Williams alloy tubulars, but the rims are 19mm wide...which is
fine, except all my other 'cross rims are 21mm, so I'd have to adjust brakes
every time I switch.

I did, sorry for the slow response.
Williams has a nice deal running right now where you can get some cheap Challenge tires if you buy these wheels new from them.
