Is it sacrilege if a cross rider doesn't drink or like beer? 

Thoughts?

No beer?  No beer?  No BEER?  That's ok, as long as whatever you drink has hops and barley in it, you are all good.

I think the valid choices for a cross rider are either Belgian beer or none at all!

with respect to Belgium, american beers are far more competitive than our 'cross riders.  North Coast Brewing Co., Stillwater, Three Floyds, Stone, Rogue, Dogfish Head .... .always podium contenders!  admittedly, it's tough to beat a westvleteren 12, especially on its home soil.

What about coffee? That is my post race vice.  Do I get a pass on that?

Does the coffee have hops and barley in it?

Cream, caramel and ice.

I don't drink beer. I end up getting left out of some of what 'cross has become. I'm always much more leery of cyclists that don't drink coffee/espresso than beer.

I don't drink coffee.  But I do like beer.
